Difficulty: Medium Potatoes need to be cooked in advance and you need to stir often

Rating: Fair It needed "something" more flavor-wise.

New Recipe Challenge #5: Cheesy Chicken Enchiladas

Recipe #5: Cheesy Chicken Enchiladas (from Sandra Lee Semi-Homemade Complete Cookbook)

Difficulty: Medium Just due to the number of steps to assemble the casserole and because working with the corn tortillas that had been softening in the enchilada sauce was a little messy.

Rating: Poor This turned out to be a bit too soft and mushy for my taste. I didn't like the taste of the softened corn tortillas. Gary thought that it had tortilla chip in it. Probably will not make again.
